Great resources!

I am currently using wwoof.org and http://www.helpx.net/ and very useful to find places in which to volunteer.

I had not known about the European Voluntary Service one. That one sounds interesting too. I look forward in browsing the others too.

If I happen to find any more along my path, I'll add them onto here.

Hello and Happy NEW Year !

I can also recommend :
http://www.workaway.info/

We have a lot of very good experience with wwoofers, HelpX, and workaway. We are a host and looking every time for helping hands. Sometimes like now we are fully booked.
Especially in May 2013 we are looking for historical barn renovation a lot of volunteers (at least 10.....roofer, carpenter...) So feel free to contact us at : workaway

We signed up for workaway thank you! Waiting for them to approve our profile. We also have a helpx account although never found anyone there. We have a woofer coming and are getting inquiries from a couple others. Thank you for this long list and great reminder! Jules
